Ingredients For Aam Ka Achar :

  • Raw Mango – 3 kg ( you can take according to your need )
  • Raw mango pickle spice – 150 grams ( you can use readymade spice also )
  • Red chilli powder – 150 grams
  • Mustard oil – 1.5 litres
  • Fenugreek seeds – 150 grams
  • Fennel seeds – 50 grams
  • Onion seeds – 2 to 3 tbsp
  • Asafoetida – 2 1/2 tbsp
  • Turmeric powder – 150 grams
  • Salt – 150 grams

Preparation Of Aam Ka Achar :

  • Take the cutted raw mangoes and wash them nicely in water.
  • Now, after washing there is no need of drying raw mangoes in sunlight just spread these on cotton cloth inside your house, within 1 or 2 hour these will be comp;letely dried off, or to fasten the process you can switch on the fan also.
  • Now, when your all the raw mangoes gets completely dried off , take a plastic bucket or any plastic container , because it contains sourness so i will not use any aluminium , steel or iron utensil.
  • Now put all the raw mangoes cuttings inside our plastic bucket or container.
  • Now add raw mango pickle spice in it and mix it nicely , toss the raw mangoes a bit so that they can mix properly.
  • Now add red chilli powder in it , and then turmeric powder.
  • Now also add 4 tbsp of salt in it.
  • Now mix all nicely.
  • Now,adding 2 tbsp of onion seeds in it and 1 tbsp of asafoetida.
  • Now mix it nicely.
  • Now,after mixing it cover it with a lid and keep it cover it with a lid and keep it for a day like this.
  • Now place a pan on the gas now and add fenugreek seeds in it and dry roast it in pan.
  • Dry roast it till it gets slightly brownish in colour.
  • Now, similarly dry roast fennel seeds in the pan.
  • Now after dry roasting both keep these aside in a plate.
  • Now, place woke on the gas and add 1.5 litres of oil in it and heat it nicely till it begins to give out fumes.
  • This raw mango pickle tastes best in mustard oil but if you want, you can use refined groundnut oil also.
  • Now, after one day take the raw mangoes which we have kept and mix dry roasted fenugreek seeds and fennel seeds in it.
  • Now, mix it nicely and toss it up.
  • Now, in this we will add oil which we have heated and when that oil will get cooled down then we will add oil in our pickle.
  • And i suggest when you finish all your work then only heat the oil so that you don’t have to be in kitchen , because it hurts eye.
  • Now, after our oil gets fully cooled down, i will mix this oil in pickle.
  • Now, mix this oil with all the spices and raw mango in it.
  • Salt and oil should be sufficient in our picklewhich will help our pickle remain preserved for longer period.
  • And now you don’t have to put this pickle in sunlight just fill this in your container , it will become ready in 5 to 6 days.
  • Now, our pickle is ready.

Ingredients :

  • Basmati rice (soak in water) – 250 grams
  • Split chickpeas or chana dal (soak in water for 15 to 20 minutes) – 50 grams.
  • Mint leaves – some mint leaves
  • oil – 3 tbsp
  • Ginger garlic paste – 2 teaspoon
  • Raisins – some raisins
  • Coriander seeds – 1 to 2 teaspoon
  • Homemade garam masala – 1 teaspoon
  • Green chilli – 1 (chopped)
  • Clarified butter – 1 teaspoon
  • Fresh coriander leaves – some of it
  • Tomatoes (cut in ring shape) – 1 to 2
  • Onions (cut in round slices) – 1
  • Bay leaf – 1 to 2
  • Cloves – 1 to 2
  • Green cardamom – 1 to 2
  • Black pepper – 2 to 3
  • Whole dry red chilli – 1 to 2

Preparation :

  • Firstly i will boil split chickpeas or chana dal in pressure cooker first,which i have soaked in water for 10 to 12 minutes  (i will boil this for 2 to 3 whistles of pressure cooker)
  • Now place woke on gas and add around 3 tbsp of oil , because i will fry onions rings in it.
  • After frying onions , when they get golden brown texture take them out and keep it aside.
  • Now in the same woke i have taken out extra oil and now only 2 tbsp of oil is there in the woke now.
  • Now add bay leaf , whole red dry chilli , cloves , black pepper and green cardamom , when oil gets heated.
  • Now i will add some onions in it , now after our onion gets golden brown
  • Add 2 teaspoon of ginger garlic paste in it
  • And also 1 green chilli chopped in it
  • Now add 1/2 teaspoon of of homemade garam masala for flavours
  • Mix it well now
  • Now add our boiled split chickpeas or chana dal in it
  • After mixing it for 1 minute add 2 teaspoon of salt in it , and mix it well soon
  • Now, add our basmati rice in it which i kept soaked in water for 10 to 12 minutes
  • Now add 2 to 2.5 cups of water in woke, to completely submerge the rice in water , so that rice can cook perfectly
  • Taste this water after stirring it , this should be little bit high on salt side so that when our kabuli cooks completely the salt will automatically becomes perfectly balanced in kabuli
  • When water starts boiling add some raisins in it
  • Now put the gas flames on low and put lid on woke and let it cook for 8 to 9 minutes
  • After 8 to 9 minutes remove the lid , you will see rice and split chickpeas are perfectly cooked
  • Now put the tomato ring that we cutted on our kabuli evenly, i have not added inside it because i want rice to be white in colour
  • Now sprinkle coriander seeds on it
  • Now sprinkle the onion rings we have fried in starting
  • After that sprinkle pinch of garam masala on it
  • Now add 1 to 2 teaspoon of clarified butter on it, it will enhance the taste of kabuli
  • And then, sprinkle some fresh mint leaves and frsh coriander leaves on it
  • Now our chana dal kabuli is ready

Ingredients :

  • Paneer (indian cottage cheese) – 150 grams
  • Gram flour – 200 grams
  • Chaat masala – some for sprinkling over paneer pakode
  • Turmeric powder – 1/2 teaspoon
  • Red chilli powder – 2 teaspoon
  • Salt – 1.5 teaspoon
  • Baking powder – 1 teaspoon
  • Homemade garam masala – 1/2 teaspoon
  • Fresh coriander leaves – some coriander leaves
  • Oil – for frying

Preparation :

  • For paneer pakoda i will first make batter.
  • I am taking 200 grams of gram flour in a utensil.
  • Now,adding 1/2 teaspoon of turmeric powder in gram flour and adding 2 teaspoon of red chilli powder , now adding 1.5 teaspoon of salt ( or according to the taste) , 1/2 teaspoon of homemade garam masala and 1 teaspoon of baking powder for making it fluffy.
  • Now,mix all these spices well together.
  • Now,i will add water in it don’t make it too thin or too thick.
  • Now,after mixing it add some fresh coriander leaves in batter and mix it well.
  • Now our batter is ready.
  • Now,place woke on the gas fill it with oil for frying and let it heat.
  • put small drop of batter in oil and taste it to check whether salt in batter is perfect or not.
  • Now,when oil gets heated take the pieces of paneer and dip it inside the batter cover it nicely with batter and put it slowly in oil to fry.
  • Now,once it get fried nicely from one side flip it and let it fry from other side also.
  • Now,after it get fried from both the sides our paneer pakode are ready, take them out.
  • Now,sprinkle some chaat masala on paneer pakode and toss it up , it will increase their taste more.
  • Our paneer pakode are ready.

Ingredients :

  • Gunde – 3 kgs ( take according to your need )
  • keri (raw mango) – 1.5 kgs
  • Pickle spice – 300 grams (this is availabel in market , easily you can buy)
  • Red chilli powder – 5 spoons (medium)
  • Fenugreek seeds – 150 grams
  • Fennel seeds – 100 grams
  • Turmeric powder – 3 spoons (medium)
  • kalonji (black cumin) – 3 to 4 spoons (medium)
  • Asafoetida (hing) – 2 to 3 teaspoon
  • Salt – 3 spoons (medium)
  • Oil – 2 to 2.5 litres (i have taken this much of oil for 4.5 kg of pickle)

Preparation :

  • Wash gunde and raw mango nicely and keep them on cotton cloth to make them dry completely.
  • When washing gunde dopn’t remove the sticks while washing,otherwise it will get sticky.
  • Remove sticks after gunde gets dry completely.
  • Place the woke on the gas and add 150 grams of fenugreek seeds and dry roast this till it gets golden brown.
  • After fenugreek seeds gets dry roasted , add 100 grams of fennel seeds now dry roast these same as fenugreek seeds.
  • Now i have placed a big utensil on the gas  , i am making 4.5 kgs of oickle so i need big utensil ,you can take utensil according to your quantity.
  • Now adding oil , i am using refined groundnut oil in this you can also use mustard oil for the pickle.
  • Now,after oil is heated i am adding 2 to 3 teaspoons of asafoetida in oil.
  • And now i will add all the gunde in oil for frying.
  • Add oil in sufficient quantity so that when you will fill jar it will be completely submerged in oil and at that time youy don’t have to add more oil at that time.
  • keeping sufficient oil in this pickle will make it lasts for whole year.
  • Now after frying gunde for 10 minutes , i will set the gas flames on medium we don’t have to overfry it , we don’t want to make it soft while frying.
  • after frying it for 10 minutes it’s colour will change a bit , now add raw mango in it.
  • stir it now,and now i will add other spices.
  • now i will add 3 to 4 spoons of black cumin,roasted fennel seeds,roasted fenugreek seeds.
  • keep gas flames on medium.
  • now,adding pickle spice in it.
  • now,mix it nicely.
  • now,i have turned off the gas , oil is heated so all the spices will nicely mixed in this,so there is no need to turn on the gas,keeping gas on for long can make spices black in colour.
  • now i will mix spices from our side.
  • i will add red chilli powder , turmeric powder and salt.
  • now mix it properly.
  • add sufficient quantity of oil otherwise fungus can be formed on pickle.
  • now pickle is ready after it gets cool down , fill this in completely dry jar and don’t use wet spoon.
  • after 15 to 20 days it will be completely ready to eat.

Ingredients For Restaurant Style Kadhai Paneer :

  • Paneer – 100 grams ( cut in cubes shape or any shape you like)
  • Onion – 1 small onion ( for tempering)
  • Tomatoes – 2 ( medium sized )
  • Fresh cream – 2 spoons
  • Fennel seeds – 1 teaspoon
  • Cumin seeds – 1 teaspoon
  • Coriander seeds – 1.5 to 2 teaspoon
  • Dry red chilli – 2 to 3
  • Black pepper – 7 to 8
  • Capsicum – 1 ( cut into pieces )
  • Ginger – 10 to 15 cloves
  • Green chilli – 2 to 3 ( small ones )
  • Onion – 1 big onion ( cut into medium pieces not small )
  • Salt – 1 teaspoon
  • Red chilli powder – 1 teaspoon
  • Turmeric powder – 1/2 teaspoon
  • Oil

Preparation :

  • Now , turn on the gas and put pan on it
  • Now , add all the dry spices fennel seeds , cumin seeds , coriander seeds , dry red chilli and black pepper into the pan and dry roast it
  • After dry roasting these add this in a grinder jar and grind it
  • Now,you have fresh and nice aromatic dry roast spice powder
  • Now put pan on the gas and add 1 tbsp of oil in the pan and let it heat
  • Now after the oil gets heated add 10 to 15 cloves of garlic in the oil and roast it
  • After roasting it add small pieces of ginger in it and roast this also
  • Now,add onion into it , don’t add small pieces of it cut medium pieces of onion,and after it gets slightly golden brown in colour add tomatoes in it (chopped)
  • Now after all these gets roasted add all of it in a grinder jar and grind it to make paste of it
  • Now after grinding you got nice paste which will bring great taste in our dish
  • Now,place woke on the gas and add 2 to 3 tbsp of oil in it , and let it heat
  • Now oil is heated ,add 2 to 3 small green chillies in it
  • Now,i will add big slices of onions in the oil
  • Now,i will add 1 teaspoon of ghee or clarified butter in it to give it a unique flavour ( if you don’t want to add ghee then you can skip ghee)
  • Now,onion is slightly golden brown in colour and i will now add 1 capsicum cutted in medium pieces in it
  • Capsicum will become soft after getting fried in oil
  • After that i will add 1 teaspoon of red chilli powder , 1/2 teaspoon of turmeric powder and 1 teaspoon of salt
  • Now , mix it well
  • Now, i will add the paste we prepared by grinding in the jar
  • Now , mix it well
  • Our paste and spices are cooked well , so i will add the dry roast spices we grinded in starting
  • Add 2 teaspoon of dry roast spice in it and mix well
  • Now,add some water in it and cook it
  • All the spices and paste we added were already roasted and cooked well , so we don’t need to cook it for long
  • Now,add 2 spoons of fresh cream in it , it is easily availabel in market and now mix it
  • Now put lid on woke and let it cook for 1 to 2 minutes
  • After 1 to 2 minutes remove the lid our restaurant style kadhai paneer is ready , now add 1/2 teaspoon of homemade garam masala in it and some fresh coriander leaves in it.
  • Our restaurant style kadhai paneer is ready to eat

Ingredients For Bread Roll :

  • Bread slices
  • boiled potatoes – 5 to 6 potatoes (after boiling mash these potatoes)
  • onion – 1 (finely chopped onion)
  • Salt – 1 teaspoon (add according to the taste)
  • Red chilli powder – 1 teaspooon
  • Green chilli – 1 (finely chopped)
  • Some coriander leaves
  • Some homemade mint leaves powder
  • Dry mango powder – 1 to 2 teaspoon
  • Cumin seeds – some of it
  • Oil – for frying

Preparation Of Potato Stuffing :

  • Place woke on the gas and add 1 tbsp of oil and let it heat.
  • After oil gets heated add boiled an mashed potatoes in woke.
  • Now,put gas flames on medium and add some cumin seeds in it , its flavours tastes very nice in stuffing.
  • Now,add 1 teaspoon of red chilli powder.
  • Now,adding 1 teaspoon of salt ,you can add according to your taste and taste the stuffing ,if you find less slat in it then you can simply add more salt to it.
  • Mix it well.
  • Now,add 1 finely chopped onion in it ,we don’t have to cook for long after adding onion in it.
  • Now,i will add chopped green chillies in it and mix it well.
  • Now,i will add 1 to 2 teaspoon of dry mango powder in it for little bit of sourness or tangyness.
  • After mixing it well i will add my homemade mint leaves powder in it. 1 teaspoon of it , its flavour make stuffing more tasty.
  • And i will also add some coriander leaves in it.
  • Now mix it well.
  • Our bread roll stuffing or potato stuffing is ready.

Preparation Of Bread Roll :

  • Take bread slice and remove dark corners of slice.
  • Take a bowl fill it with water,dip slice in bowl and then put on the palm of our hand and squeeze.
  • Then take some of the potato stuffing and put it in centre of the bread slice.
  • Now,fold all the 4 corners of the bread slice and gently squeeze it,it will bind easily and excess water will also squeezed out.
  • This way you can easily make bread rolls.
  • Now,place woke on the gas and fill it with oil to fry our bread roills.
  • When oil gets heated put our bread rolls in oil.
  • When fried from one side flip it to make these fry from other side as well.
  • Now,when golden brown texture comes on the bread rolls take these out on kitchen towel napkin which will remove excess oil from bread rolls.
  • Now,serve bread rolls with tomato ketchup or homemade coriander dip.

Ingredients For Marwari Kesar Pista Ice Cream:

  • Milk – 1 litre
  • Sugar – 100 grams
  • Condensed Milk – 400 grams ( 1 tin )
  • Milk Powder – 40 grams
  • Pistachio ( pista ) – some pista’s according to your preference
  • Cardamom (elaichi) – 6 to 7 cardamom or elaichi
  • Saffron – some of it

Preparation Of Marwari Kesar Pista Ice Cream :

  • Place woke on the gas.
  • Add 1 litre of milk in woke.
  • Always heat milk in non stick woke don’t use steel utensil because there are chances of sticking milk on it.
  • Now,stir it slowly.
  • till our milk boils.
  • Take small quantity of lukewarm milk in small bowl and add in milk powder and mix it properly.
  • And after milk boils nicely , we will add this milk powder in boiling milk.
  • Till our milk is boiling crush 6 to 7 cardamom (elaichi) , which i will add in milk.
  • Don’t throw away your elaichi skin or cover of it,put those covers of elaichi in your tea container it will add nice fragrance to your tea.
  • Now,milk is boiled completely after 6 to 7 boils we will add milk powder in it,which will make it thick.
  • Now, milk powder is mixed after giving it 2 boils.
  • Now we will add condensed milk milk in it ( 400 grams of condensed milk ).
  • Now,after 1 boil condensed milk and milk powder is completely mixed.
  • If you eat more sweet then add 100 grams of sugar in it otherwise it’s completely perfect.
  • Now,i will add saffron in it , mixed in small amount of lukewarm milk first it will give very nice colour and texture to the ice cream.
  • And also add crushed cardamom in it for nice fragrance in our ice cream.
  • Now i will add pistachio (pista) in it , sliced pista and some of it we will keep for decorating our ice cream.
  • Now,our mixture is ready and after it gets cool down a bit , then i will keep this mixture in container and keep it in freezer.
  • Now,after 7 to 8 hours our marwari kesar pista ice cream is ready to eat.

Ingredients For Masala Dosa :

  • 1 kg potato (boiled and mashed).
  • 2 big onions (chopped).
  • Oil – 3 tbsp.
  • 2 green chillies (finely chopped).
  • Some curry leaves.
  • Mustard Seeds – 1.5 teaspoon.
  • Red chilli powder – 1 teaspoon.
  • Turmeric powder – 1 teaspoon.
  • Salt – according to tatse.
  • Dry mango powder – 1 teaspoon.

Preparation Of Masala Filling :

  • Place woke on the gas and add 3 tbsp of oil and let it heat.
  • After oil heats add 1.5 teaspoon of mustard seeds.
  • When mustard seeds starts crackling add some curry leaves in it.
  • Now,add 1 teaspoon turmeric powder in it.
  • And after that add 1 kg of boiled and mashed potato in woke.
  • Mix it well now , turmeric powder will give good colour to the dosa filling.
  • Now, when turmeric powder is mixed well with potato add 1 teaspoon of red chilli powder.
  • Then add 2 finely chopped green chillies in it.
  • Now,mix well.
  • Now, add chopped onions in the filling and again mix well.
  • Now,add salt to taste and dry mango powder – 1 teaspoon , mix well.
  • Now,add some coriander leaves and our filling or masala of dosa is ready.

Preparation of Masala Dosa :

If you want to learn to make dosa batter at home , you can read my last post of homemade dosa batter in my website’s homemade section.

  • First , we will make our dosa batter little bit thin , thick batter is used for idli.
  • Take a portion of batter in seperate utensil and add little bit of water in it ,stir it.
  • Now batter is thin and ready to make dosa.
  • Take a non stick tawa or pan it does’nt need oil , so it’s oil free dosa if you don’t have tawa like this then you can also rub onion on it or use little bit of oil.
  • Now put 2 spoons (medium) of batter on the tawa and move in a circular motion with spoon , without lifting spoon.
  • Let it cook from one side.
  • When it gets cooked from one side it’s corners will rise leaving tawa you can simply now flip it.
  • After getting cooked from other side as well fill our masala or filling in the centre and fold it.
  • And our crispy dosa is ready.

Ingredients For Homemade Dosa Batter :

  • 750 grams of dosa rice (which is easily availabel in market)
  • 350 grams of urad dal (dhuli )
  • Salt – 2 teaspoon

Preparation Of Dosa Batter :

  • Mix 750 grams of dosa rice and 350 grams of urad dal (dhuli) or gram together.
  • Soak this mixture of both in water and keep it soaked for whole night.
  • And if you don’t have measuring cups at home , simply take a small bowl.
  • Take 3 bowls of dosa rice , and add 1.5 bowl of urad dal in it , this is how you can measure the proportion of both.
  • Now, take out the soaked dosa rice and urad dal mixture.
  • And add this in a grinder jar to make batter out of it.
  • Add little bit water in it so that it easily gets grinded.
  • Now,take out the batter from the jar keep it bit thick.
  • Now add 2 teaspoon of salt in it.
  • Mix it nicely.
  • Now, after mixing put this batter in a warm place after covering it with lid.And if you have microwave at home,then put this batter inside microwave(in off state).
  • Take a big utensil because when it will get fermented , it will become twice in quantity so take a big utensil.
  • Now,after 5 to 6 hours later our batter will be fermented and becomes twice in quantity and thick.
  • If you are making dosa you have to make it thin a bit and if you are making idli from the batter don’t make it thin.
  • So , friends our dosa batter is ready.

Ingredients :

  • Take 2 or 3 bunches bunches of fresh mint leaves or you can also take more quantity according to your need.

Preparation :

  • Take out leaves of fresh mint out from the bunch.
  • And wash these leaves 2 to 3 times with fresh water.
  • Then take one small bucket or any utensil filled with fresh water.
  • Now dip these mint leaves in this water filled bucket and rinse out from water.
  • Dirt will remove completely from mint leaves.
  • Now,put these leaves in a utensil with holes so that it can rinse out completely.
  • Now take cotton cloth, any cloth you have at home.
  • Spread cloth on any table or in any room.
  • Now,spread the mint leaves on the cloth to make them dry.
  • Always,dry mint leaves in shadow or inside house,don’t dry these leaves in sunlight otherwise leaves will become black in colour,and pudina powder will become black instead of green.
  • When you are drying mint leaves inside the room to make these dry fast you can turn on the fan also,to fasten the process.
  • When these leaves gets a bit dry then put these in utensil with cloth again.
  • Now,let these leaves dry for 2 days.
  • Now,after 2 days these will get completely dried off.
  • Now take a sieve and crush leaves through sieve powder will sieve out and remaining small twigs will left in sieve which you can remove easily.
  • Or , you can grind dry leaves in grinder then sieve it, this will fasten the process of sieving.
  • Now,your pudina powder is ready.
